Roasting garlic starts with a fresh head of garlic. You want to make sure it’s fresh. Garlic that starts to go bad doesn’t taste very good (or smell very appetizing).

Pre-heat oven to 400 degrees.

After you have taken off the outer layer, you will cut the tip off. Don’t go too far down — you don’t want to waste that awesome garlic.

Add 1-2 teaspoons to the top of each head of garlic.  You’ll want to make sure the olive oil drips to the bottom of the bulb.

Your garlic is done when it’s oozing out of the top like this. It should be soft all the way through.

Remove it from the bulb. You will now be able to do whatever you choose to do with it.
