We all know Thin Mints are better frozen, so here’s a way to enjoy Samoas and Do-Si-Dos from your freezer. These ice cream truffles are a great way to enjoy a little after dinner dessert.

I chose Samoas and Do-Si-Dos because I thought these two cookies would taste best with vanilla ice cream.

For the Do-Si-Dos, use an entire sleeve and crush up in the food processor.

You need about 8 Samoas.

Both will look like this when it’s ready.

In the meantime, line two cookie sheets with a piece of parchment paper and put in the freezer for at least 30 minutes.

When the cookie sheets are cold and the cookies are crumbled, take out the ice cream and let thaw for at least 15 minutes.

Using a small ice cream scooper, scoop out the ice cream and cover with the crushed up Girl Scout cookies.

Put the truffles back on the cookie sheet and back in the freezer for at least 30 minutes. It would be better to let these sit overnight to really freeze through.
