Coffee Chocolate Chip Ice Cream Sandwiches
Coffee Chocolate Chip Ice Cream Sandwiches are a combination of my two favorite desserts. Homemade vanilla ice cream and my Coffee Chocolate Chip Cookies. Both are delicious on their own but together are a special treat!
Why this Recipe Works
Let’s face it, what doesn’t work about mixing coffee chocolate chip cookies and homemade vanilla ice cream? I can’t think of anything. Separately, these two desserts are delicious but when you bring the two together, magic happens. And it makes the perfect treat for a summer get together or for a late-night craving. Did I mention, my kids can’t get enough of these?
Coffee Chocolate Chip Ice Cream Sandwiches Ingredients

For the Vanilla Ice Cream you’ll need:
- Heavy Whipping Cream
- Half and Half Cream
- Vanilla Extract
- Sugar
- Ice Cream Maker
How to Make the Ice Cream
For this recipe, I use my very popular Cuisinart Ice Cream Maker. I say popular because we use this ice cream maker weekly for homemade ice cream. But if you don’t have an ice cream maker, you can make homemade ice cream using this Handmade Strawberry Vanilla Ice Cream without the strawberries.
- Start by putting the finished ice cream container in the freezer to get cold. I use a bread pan.
- In a mixing bowl, combine the heavy whipping cream, the half and half, vanilla extract, and sugar.
- Once it’s mixed, put in the ice cream maker and let it do its thing.
- Add the ice cream to the chilled bread pan (or container of your choice) and freeze overnight in the freezer.
- While the ice cream is freezing, make your cookies.
- Let the cookies cool overnight.
- When the ice cream is frozen and the cookies are cooled, add one scoop of ice cream to one of the cookies. Use the other cookie to flatten the ice cream and create a sandwich.
- Eat right away or put the ice cream sandwich back in the freezer to stay frozen.
Notes

- Any container you will use for the ice cream will need to chill in the freezer for at least 30 minutes before pouring in the ice cream. This will keep it from melting right away.
- If you are in a hurry to make the ice cream sandwich, put the cookies in the freezer for 30 minutes before adding the ice cream. This will keep the ice cream from melting on the cookie.
- I always put the ice cream sandwiches back in the freezer once they are made. This helps gel the ice cream to the cookie.
- Use any cookie or ice cream to make these ice cream sandwiches. It works with just about every flavor.

Ingredients
For the Vanilla Ice Cream
- 2 cups Heavy Whipping Cream
- 2 cups Half and Half Cream
- 1 cup Sugar
- 2 teaspoons Vanilla Extract
Instructions
For the Vanilla Ice Cream

Combine the heavy whipping cream, half and half, sugar and vanilla extract in a mixing bowl.

Pour into ice cream maker and follow instructions for your ice cream maker.

When ready, add to a chilled pan and put in the freezer overnight or for at least one hour.

Add one scoop of ice cream between two similar sized cookies. Make sure the cookies are completely cooled. The link to the cookie recipe is in notes.

Once the ice cream sandwiches are made, put back in the freezer for at least 30 minutes to refreeze the ice cream. It's ok to eat them right away too:)

Store in the freezer.
