Coffee Chocolate Chip Cookies

I have a big birthday celebration coming up and it’s made me a little sentimental and missing home. Sometimes when you’re feeling a little homesick, the best thing to do is make something that takes you back. That is why these Coffee Chocolate Chip Cookies are perfect right now.

When I was growing up, my mom would make homemade chocolate chip cookies every Friday after school. We always knew it was the weekend when we could smell these delicious cookies when we walked in the door. My mom had the warm cookies and cold milk waiting for us when we got home. I can still see us sitting at our table remembering the week gone by and enjoying the melted chocolate oozing out of the cookies. I have since added some coffee flavor to my mom’s recipe and started this tradition with my own kids.


If you are looking for an easy cookie recipe that doesn’t use any fancy equipment, this is it! Everything is done by hand which makes it feel really homemade. You will find all of these ingredients in most cookie recipes. I do use dark chocolate chips and a coffee liqueur for the boost of coffee flavor.

You will need a little elbow grease to mix in the chocolate chips but its worth it. When it seems like there are just too many chips in the dough, keep mixing — these chocolate chips are plentiful and make every bite chocolaty.

What I love about these cookies is not only the flavor, but they don’t flatten like a normal cookie. These remind me more of a cake cookie because of the thickness of each bite. And you can see how many chocolate chips you get in each bite.

A glass of milk should be part of this recipe because it wouldn’t be the same without it. I also love eating these cookies with a morning cup of coffee to really emphasize the coffee flavor.

And you cant eat just one of these delicious cookies that only take 10-minutes to bake. It’s a wonderful way to bring a taste of home into your life. And it reminds me of those days around my dining room table talking about our busy weeks.

Coffee Chocolate Chip Cookies

Ingredients

  • 1 cup Butter softened
  • 1 cup Brown Sugar
  • 3/4 cup Sugar
  • 2 Eggs beaten
  • 3 tablespoons Coffee Liqueur
  • 3 cups All-Purpose Flour
  • 3/4 teaspoon Baking Soda
  • 3/4 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 3 cups Dark Chocolate Chips

Instructions

  1. Preheat oven to 350° and line cookie sheet with a liner or parchment paper

  2. In a mixing bowl, blend together the butter, brown sugar and sugar until smooth

  3. Beat the eggs one at a time and add to the cookie mixture

  4. Stir in the coffee liqueur 

  5. In a separate bowl, combine the flour, baking soda, salt, and cinnamon.  Add to the creamy mixture

  6. Fold in dark chocolate chips and drop a spoonful on the cookie sheet 

  7. Bake for 8-10 minutes or until the ends of the cookie turn slightly brown

  8. Let cool for 5-10 minutes and serve

Recipe Notes

Use regular chocolate chips if you don’t have the dark chocolate! It still tastes amazing!
