Meatballs & Homemade Tomato Sauce!

Burnt macaroni - meatballs 120aI may not be Italian but I love Italian food!  I am always making pasta, hence the name Burnt Macaroni.  But this is the first time I have ever made homemade spaghetti sauce.  And if you are a fan of a healthy serving of tomatoes, you will love this sauce.  If I had known how easy homemade spaghetti sauce was, I would have made this years ago! 

Burnt macaroni - meatballs 032aYou start with, what else, canned tomatoes.  You will need 2 28-ounce cans of tomatoes!

And very traditional sauce ingredients, onions, garlic, oregano, salt, pepper and a bay leaf!

Burnt macaroni - meatballs 060aAfter you soften the onions, garlic, oregano, salt and bay leaf, you will add tomato paste.  This will need to cook for about five minutes until it is a dark red color.

Burnt macaroni - meatballs 066aThen you add the tomatoes.  Let it boil and cook for about 1 hour, stirring every 5 minutes so it doesn’t burn.  Over the hour, the sauce will thicken.  You can decide to use a hand-mixer to soften the tomatoes even more.  Or in our case, we left them a little chunky.

Burnt macaroni - meatballs 081aNext get your ingredients ready for the meatballs.  2-pounds of lean ground beef, salt, pepper, 2 eggs, oregano and breadcrumbs.

Burnt macaroni - meatballs 091aMix it by hand until all ingredients are thoroughly combined.  Coat a pan with olive oil, roll the mixture into a ball (whatever your desired size).  I like my meatballs bigger than golf ball size.  Put in oven at 450 degrees and cook thoroughly, about 20 minutes, depending on size of meatballs.

Burnt macaroni - meatballs 112aDrizzle cooked meatballs with homemade sauce, add Parmesan Cheese and parsley for garnish.  It’s delish!  And my kids loved it!

My Mom's Meatballs

Prep Time 20 minutes
Cook Time 20 minutes
Total Time 40 minutes

Ingredients

  • 1 pound lean Ground Beef
  • 1 Eggs
  • 1/2 cup Italian Breadcrumbs
  • 1 tablespoon Ground Oregano
  • 1 teaspoons Salt
  • 1 teaspoons Pepper
  • 2 tablespoons Olive Oil

Instructions

  1. Preheat oven to 450 degrees
  2. Combine all ingredients except the olive oil in a bowl
  3. Mix everything thoroughly
  4. Drizzle olive oil in large pan, spread evenly
  5. Roll the mixture to create your specified size meatball
  6. Roast in oven until firm and cooked through, about 20 minutes (depending on size of meatball)
  7. Pour sauce over meatballs and serve hot

Recipe Notes

This is my mother's meatball recipe. She usually puts the uncooked meatballs in the sauce and cooks for an hour on low. The meatballs are boiled and have a slightly different taste. Both ways are delicious.
