Zucchini Parmesan Chips!

Burnt Macaroni - ham stock, father daughter, trash, zucchini chi 334abI will pretty much eat anything that has parmesan cheese in it.  So when I came across this recipe for a crispy zucchini chip, I couldn’t resist.  I will say it’s soooo much better when it’s crunchy and crispy like a potato chip — it needs to be crispy!  This is a great vegetable to use as a side dish or even as a snack.  And if I made it, it has to be easy! 

Burnt Macaroni - ham stock, father daughter, trash, zucchini chi 288abThis recipe starts with 2 medium, fresh zucchini.  If you prefer squash, you could use squash too.  Before you cut these up, pre-heat your oven to 450 degrees.  It needs to be really hot for these to brown.


Burnt Macaroni - ham stock, father daughter, trash, zucchini chi 291abCut the zucchini into chips.  Season with salt, pepper, garlic powder.  You will then add olive oil and the egg white.  The egg white holds the cheese and bread crumbs in place.  Make sure you take out the yoke of the egg — you only want the egg white.

Burnt Macaroni - ham stock, father daughter, trash, zucchini chi 301abUsing a flat bowl, mix the parmesan cheese and panko bread crumbs.  You could use regular bread crumbs and next time I am going to try my Italian bread crumbs to see if it changes the taste.  You will then put the coated zucchini slices in the cheese.  Make sure it’s fully coated with the cheese and bread crumbs.

Burnt Macaroni - ham stock, father daughter, trash, zucchini chi 313abAfter greasing the baking pan with some olive oil, place the zucchini chips in rows like this.  Bake for about 45 minutes.  I like it really crispy!  You may want to take it out earlier if you don’t want it too crispy.  Either way, sprinkle some sea salt on top for added flavor once it’s finished.

Zucchini Parmesan Chips!

Prep Time 20 minutes
Cook Time 45 minutes
Total Time 1 hour 5 minutes

Ingredients

  • 2 medium Zucchini cut into chip slices
  • 1/2 teaspoon Salt half mixed in, half sprinkled on top when finished
  • 1/2 teaspoon freshly Ground Pepper
  • 1/2 teaspoon Garlic Powder
  • 1 tablespoon Olive Oil
  • 1 Egg white
  • 1/2 cup Panko bread crumbs
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 450 degrees
  2. Lightly grease baking sheet with Olive Oil
  3. Cut Zucchini into 1/4 inch rounds
  4. Put Zucchini chips into a bowl and add salt, pepper and garlic powder
  5. Drizzle in 1 tablespoon of Olive Oil and egg white and mix together.
  6. In a flat bowl, mix Panko break crumbs and Parmesan cheese together
  7. Place in each Zucchini chip and cover both sides with the mixture
  8. Place in the greased baking pan
  9. Bake for 45 minutes or until these are golden brown.
  10. Sprinkle sea salt on top and serve warm
