Homemade Fried Rice

I love fried rice, my kids love fried rice but I always use the “packet” from the grocery store — until now!  

My friend and neighbor Kelli brought over some homemade fried rice and my husband went crazy over it.  His complete satisfaction of this dish was very obvious with the closing of his eyes and his hmmmms!


I knew the challenge flag had been thrown so I accepted!  And honestly it was as easy as pouring in the grocery store packet!  I only varied it a little — I used brown rice but apparently white rice (which Kelli used) was better — according to my husband.  You be the judge!

Burnt Macaroni - fried rice, yl disposal, yl refrig, ham stock 005abStart with the rice.  I used brown rice, but next time I will try it with the white rice.  You can make the rice way before you prepare this dish.  Kelli suggests doing it the night before.  I did mine a couple of hours before and let it sit.  Besides the rice you will need frozen peas & carrots, a small onion, garlic, eggs, soy sauce and sesame oil.

Burnt Macaroni - fried rice, yl disposal, yl refrig, ham stock 012abFirst thaw the frozen peas & carrots then chop up your onion and mince the garlic.  In a large skillet on medium high, heat up the sesame oil and add the onions, garlic and veggies.  This should only take a few minutes until the onions and garlic are softened.

Burnt Macaroni - fried rice, yl disposal, yl refrig, ham stock 027aNow add the cooked rice and soy sauce.  Mix together and let the rice heat up.  Once it’s all mixed, add a little more soy sauce for added flavor.

Burnt Macaroni - fried rice, yl disposal, yl refrig, ham stock 036abYour fried rice will look like this and is ready to serve.  There are many variations to this dish.  I like getting a roast chicken and adding the chicken to make a complete meal.  You can also vary up the veggies — maybe some snap peas, broccoli, green onion — the skies the limit!  Thanks Kelli for this amazing recipe!

Homemade Fried Rice

Prep Time 30 minutes
Cook Time 20 minutes
Total Time 1 hour

Ingredients

  • 3 cups cooked Rice white or brown Day old or leftover rice works best
  • 3 tablespoons Sesame Oil
  • 1 cup Frozen Peas & Carrots thawed
  • 1 small Onion chopped
  • 2 teaspoons Garlic minced
  • 2 Eggs slightly beaten
  • 1/2 cup Soy Sauce

Instructions

  1. Cook your rice (white or brown) before making this dish. You can even make the rice hours before or even the day before.
  2. Thaw frozen peas & carrots.
  3. Chop the onion and mince the garlic
  4. Over a medium high heat, heat up the sesame oil and cook the garlic, onion and thawed peas & carrots until softened
  5. Lower the heat and push the veggie mixture to the side of the pan. Add the eggs (slightly beaten) to the other side and scramble. Make sure all of the egg is cooked
  6. Add the rice and 1/2 of the soy sauce
  7. Mix together
  8. Add the remaining soy sauce and blend all together
  9. Serve hot

Recipe Notes

This recipe is great for a meal or a side dish. And it makes for great leftovers. Again there are many variations to this recipe. Add whatever veggies or even meat you want. Thanks again Kelli Ross for this delicious recipe!
