Watermelon Blueberry Salad

This delightful summer salad will freshen up any morning or afternoon brunch.  It’s the perfect use of red, white and blue ingredients!


Tis the season for watermelon!  This has become my all time favorite summer fruit.  Whether we put it in a salad, like this Watermelon Blueberry Salad, or grill it like this Grilled Watermelon with Goat Cheese, we love to have watermelon in our fridge every spring and summer.

Another bonus to this salad is having fresh blueberries and mint in it. The blueberries offer color and flavor and the mint is really fresh. And if you have any leftover mint, add some to your lemonade for a refreshing drink.

I cut the watermelon into cubes so they are bite sized.

I added the blueberries and chopped feta to add the perfect red, white and blue salad. This is perfect for a summer holiday or just because.

Add the juice of one lemon and the crushed mint and you have the perfect side salad to any bbq!

Ingredients

  • 1/2 of Mini Watermelon, cubed
  • 1 cup Fresh Blueberries
  • 1/2 cup Feta, cubed or crumbled
  • Mint Leaves, chopped
  • 1 Lime, juiced

Instructions

  • Slice the watermelon in half and cut slices then chop into cubes
  • In a serving bowl, add the watermelon, blueberries, cubed feta cheese and chopped mint
  • Squeeze the juice of one lemon on top and combine
