White Pizza with Tomatoes
If there is one thing I have learned about pizza is you can NEVER eat enough of it! And with this White Pizza with Tomatoes recipe, you can really never have too much! I grew up eating pizza every Friday night. It may have started as a lent thing but we loved it so we went out for pizza every Friday. And it was just the plain, New York style pizza period! We didn’t mess around with toppings or change it up with variety. We stuck to plain cheese pizza and it’s still one of my greatest food memories growing up!
But now that I’m grown up and have experienced the outside world of pizza, I like to experiment a little. I am always trying to recreate my favorite white special pizza. It includes a white sauce, tomatoes, and tons of garlic. For this pizza, I came really close!
It starts with a simple base of ricotta cheese and minced garlic. By the way, you can use a homemade pizza crust or a wonderful store bought. You can find some great crusts in your local store. Follow the directions for the crust and pre-cook it for a few minutes.
Spread the ricotta topping and tomatoes. I just a variety of mini tomatoes on top. I actually purchased two containers of these small tomatoes and made this pizza and the Caprese Salad Bowl recipe with both. It’s a great way to use up summer tomatoes before we move completely into fall food.
I finished off this pizza with some fresh parsley but you could also use fresh basil to top it off. This is a wonderful Friday night pizza. Add a side salad and a glass of wine and you have the perfect date night! I recommend a Pinot Noir with this pizza!

Ingredients
- 1 pkg Store bought Pizza Crust or Homemade
- 1 8 oz container Ricotta Cheese
- 1 clove Garlic minced
- Salt to taste
- 1 pkg Variety of Small Tomatoes cut in half
- Fresh Parsley chopped
Instructions

Follow instruction for pre-cooking the crust

In a mixing bowl, combine the ricotta cheese with the minced garlic

Spread the cheese mixture on top of the pre-cooked crust. Add a pinch of salt on top of the cheese

Add the sliced tomatoes on top with the flat surface facing up

Put back in the oven for 8-10 more minutes or until the tomatoes are softened and browned.

Remove the pizza and sprinkle the parsley on top. Serve
