Why Crostini Recipes Work

Building a crostini doesn’t take a lot of skill — it just takes some imagination. It’s one of our favorite ways to eat ingredients we love and have in our refrigerator. This Balsamic Strawberries and Ricotta Crostini has many uses. Make it as a delightful summer appetizer or it can be served as an after dinner dessert!

How to Make Balsamic Strawberries and Ricotta Crostini


It all starts with a great loaf of french bread. We love a french baguette all by itself, but when you roast it in the oven with a little olive oil, it elevates the bread to another level. Here’s what else you will need:

  • Fresh Strawberries
  • Ricotta Cheese
  • Balsamic Vinegar
  • Mint
  • Salt & Pepper

Once the bread has cooled, you can start assembling your crostini. Add the ricotta first and season with a little salt & pepper. Top with the sliced strawberries and drizzle a little balsamic vinegar on top. Add the mint as a garnish and serve.

Notes

  • Make sure you toast the bread on bake and not on broil. It’s tempting to use the broil mode but this burns the bread really fast. Take the time and bake for about 15 minutes or until you get the desired crunch.
  • Let the bread cool before you spread the ricotta cheese on top. The cheese will melt and get messy if you don’t.
  • Assemble the crostinis just before you are about to serve. The bread can be toasted ahead of time but don’t leave the cheese out too long.
  • Another option is to use goat cheese on the bread with the strawberries. Or you can pair the goat cheese with some blueberries, thyme, and honey. See the image below!

Balsamic Strawberries with Ricotta Crostini

Ingredients

  • 1 French Baguette sliced into 10-12 slices
  • Olive Oil
  • 10-12 Fresh Strawberries quartered
  • 1 cup Ricotta Cheese
  • Salt & Pepper
  • Balsamic Vinegar to drizzle
  • Fresh Mint for garnish

Instructions

  1. Pre-heat oven to 350 degrees and slice the french baguette into medium to thin slices.

  2. Using a brush, spread a little olive oil on both sides of the baguette slices. Put in the oven for 15-20 minutes or until the bread browns slightly on both sides. Flip the bread onto the other side midway through.

  3. Let the bread cool completely and spread the ricotta on top.

  4. Season with a little salt & pepper.

  5. Add the sliced strawberries on top and drizzle with a little balsamic vinegar.

  6. Top with mint and serve!
