Best Roasted Vegetables….Ever!
If you are looking for a new way to roast your veggies, you have to try this recipe! My husband, Mark, is very creative when it comes to grilling or roasting so I have to give him all the credit for this recipe! It’s really easy but the flavors will explode in your mouth. Have I sold it yet? I really love this recipe…I could eat it as a meal or an afternoon snack.
The first thing you will need to do is pick your vegetables. We like using broccoli, cauliflower, carrots, onions and mushrooms. And make sure your veggies are fresh. This recipe won’t work with frozen vegetables.
Cut up your vegetables in large bites. You won’t want to deny yourself the juicy inside flavor you get when you bite into or even cut your veggies.
Put all of your cut up veggies in a bowl and soak them in olive oil. You will want to be very generous with the olive oil. Most of it will cook off in the oven but it helps soak up the seasoning.
Spread out the soaked veggies on a cooking sheet. Then grind black pepper and sprinkle salt on the top. We use sea salt for this recipe. Generously cover the veggies in the salt and pepper. Then stick in the oven at 375 degrees for 20-30 minutes. The length of time depends how crispy you want the vegetables.
It will look like this when it’s finished. The crunchiness of the vegetables will go with anything or even by itself. And I love the smell of the cauliflower and broccoli. It’s a great side dish!

Ingredients
- 1 bunch Broccoli cut
- 1 bunch Cauliflower cut
- 4 carrots cut
- Olive Oil
- Pepper
- Salt Sea Salt
Instructions

Pre-heat oven to 375 degrees

Cut up vegetables, put in mixing bowl

Saturate vegetables with Olive Oil

Transfer vegetable to cooking sheet or pan

Generously sprinkle salt and grind black pepper on top of veggies

Put in oven for 20-30 minutes until browned and roasted to your liking
