A Perfect Refreshing Drink

Now is the perfect time to experiment with new summer cocktail recipes. And with berries in season, it’s a great excuse to pick or pick up a few extra bushels of berries. I wanted to use them all and create two different flavors of drinks for a warm evening or a weekend get together. Add a little orange juice and champagne and you have a Summer Mimosa.

How to Make Summer Mimosas 2 Ways

When making these two drinks, you will need a high powered blender, like this Vitamix Blender.

For the Blackberry Blueberry Mimosa

  • Start with one cup of blackberries and one cup of blueberries. Add them to your blender.
  • Add 1/3 cup of orange juice and blend completely, until all seeds are incorporated. *See notes
  • Pour into a champagne or drink glass about 1/4 – 1/2 of the glass, depending on the flavor you like.
  • Add the chilled champagne and drink right away.

Notes

  • If you don’t have fresh berries, you can use frozen. Make sure it’s thawed out before blending.
  • For the Blackberry Blueberry Mimosa, you will have to blend a little longer to get rid of the blackberry seeds. If you can’t get them 100% blended, you will need to strain the fruit mixture before putting it into your glass.
  • Looking for a non-alcoholic version, replace the champagne with 7UP or Sprite. Or if you want a little more fizz, you can add both champagne and 7UP or Sprite.
  • You can make the fruit mixtures ahead of time and put in the fridge to keep cool. Pop the champagne right before you serve so the drink is nice and fresh.
  • I used these glasses for a bigger drink, but these mimosas can also be served in a traditional champagne flute.
