An Irish Breakfast!

One thing I love to do on St. Patrick’s Day (or close to it) is make a big, lavish breakfast. I don’t know if it’s the Irish in me, but I love a big breakfast! In fact, I could eat breakfast all day long. My kids feel the same way. We could (and do) eat breakfast for dinner a lot! What’s not to love — pancakes for dinner, yum! This Sunday before St. Patrick’s day we are putting on our running shoes to attempt a big breakfast.

Our Irish breakfast this year is going to include a little more sophistication.  We are making a true Irish breakfast of hash, potatoes and eggs.  Can’t wait!  Whether or not your are Irish this St. Patrick’s Day, we should always remember this Irish blessing…
