An Irish Breakfast!
One thing I love to do on St. Patrick’s Day (or close to it) is make a big, lavish breakfast. I don’t know if it’s the Irish in me, but I love a big breakfast! In fact, I could eat breakfast all day long. My kids feel the same way. We could (and do) eat breakfast for dinner a lot! What’s not to love — pancakes for dinner, yum! This Sunday before St. Patrick’s day we are putting on our running shoes to attempt a big breakfast.
My kids really get into it — and of course it’s always a competition. As you can see in this picture, it’s not always a friendly competition (I WILL use this photo against my son someday!)
A big breakfast wouldn’t be complete without pancakes! My kids could eat these in their sleep!
When we made this breakfast we went all out! Pancakes, french toast, eggs and of course….bacon!
Our Irish breakfast this year is going to include a little more sophistication. We are making a true Irish breakfast of hash, potatoes and eggs. Can’t wait! Whether or not your are Irish this St. Patrick’s Day, we should always remember this Irish blessing…
