This is the first pizza recipe I am going to try with my new pizza oven. And if you like pizza recipes, you’ll love this one! When you combine blueberries, goat cheese, and honey caramelized onions the flavors explode in your mouth. This Blueberry, Goat Cheese & Caramelized Onion Pizza is surprisingly delightful!

What Makes Blueberry, Goat Cheese & Caramelized Onion Pizza is so Unique

When it comes to pizza recipes, it’s all about bringing together flavors that work well together. But occasionally you try ingredients you may not expect to work together but they do. That is what happened with this recipe. The honey caramelized onions add a sweetness to the goat and ricotta cheese that is spectacular. It’s sweet and creamy and the warmed blueberries melt in your mouth. This recipe is also super easy and makes for a nice starter or dessert too.

This Blueberry, Goat Cheese and Caramelized Onion Pizza recipe starts with whole wheat Naan flatbread. Place it on a baking sheet with a slice of parchment paper.

Here’s what else you need:

  • Olive Oil
  • Red Onion
  • Honey
  • Salt
  • Red Pepper Flakes
  • Ricotta Cheese
  • Goat Cheese
  • Blueberries
  • Parsley

The first step is to caramelize the onions with the salt, red pepper flats and honey. Mix together the ricotta and goat cheese and spread it on top of the Naan flatbread. Top with the blueberries. And bake!

Notes

  • Spray or brush water on the Naan flatbread before you add the cheese mixture. This will keep it from drying out.
  • Allow the goat cheese to soften at room temperature before mixing with the ricotta cheese. It will make it easier to spread on the Naan.
  • You can substitute the Naan for another flatbread. Just do not use any uncooked dough for this recipe.
  • If you don’t have ricotta cheese, you can just use goat cheese. Or exchange the goat cheese for feta. Either will work.

Ingredients

  • 1-2 Naan Flatbread
  • 1 teaspoon Olive Oil
  • 1 cup Red Onion thinly sliced
  • Kosher Salt
  • Pinch Red Pepper Flakes
  • 2 tablespoons Honey
  • 1/2 cup Ricotta Cheese
  • 1/2 cup Goat Cheese softened
  • 1 cup Blueberries
  • Parsley chopped

Instructions

  1. Preheat oven to 400 degrees

  2. Cover a baking sheet in parchment paper and lay Naan flatbread on the baking sheet. Sprinkle or brush with water and set aside.

  3. Using a skillet, heat the olive oil over medium heat. Add the onion and season with a pinch of salt and a pinch of red pepper flakes. Once the onions start to soften, add the honey and stir. Allow the onions to caramelize and remove from the heat (about 5 minutes)

  4. In a mixing bowl, combine the ricotta and goat cheese. Spread the mixture over the Naan flatbread. Top with the caramelized onions. Then sprinkle the blueberries on top.

  5. Bake in the oven for 10 minutes or until the blueberries start to soften. You will want to make sure the Naan is also toasted.

  6. Remove and top with chopped parsley. Serve!
