Pomegranate Vinaigrette
I am always on the lookout for a new salad dressing! I have said it time and again, finding a new salad dressing is like finding a new kitchen gadget (it makes me really happy). And this Pomegranate Vinaigrette makes me really happy!
This was my first time experimenting with pomegranates. It’s something I enjoy when I’m out but never used it in any of my cooking. I figured this was a good time to try it out!
It can be a little messy to get out the seeds but a little goes a long way. I only needed 3/4 cup of pomegranate seeds.
I combined the seeds with olive oil, maple syrup, lemon juice, white balsamic vinegar and of course dijon mustard. A good vinaigrette or dressing wouldn’t be complete without dijon mustard. I put it in my blender and got this beautifully thick vinaigrette.
I paired this with a beautiful green salad. My salads always have to have something soft and something crunchy. Not to mention a lot of cheese. I made this salad with spinach, avocado, green apple, dried cranberries, walnuts and goat cheese.
Pomegranate Vinaigrette
Try something new on your salad with this super delicious Pomegranate Vinaigrette!
Ingredients
- 3/4 cup Pomegranate Seeds
- 1/2 cup Olive Oil
- 1/4 cup Pure Maple Syrup
- 1 tablespoon Lemon Juice
- 1 tablespoon White Balsamic Vinegar
- 1 teaspoon Dijon Mustard
- Dash Salt
Instructions

Put all of the ingredients in a blender and start on low and gradually go to high until you get the consistency you desire
