This recipe combines the fresh lemon taste with a beautiful graham cracker crust. The tart is made with heavy cream, vanilla extract, and delicious lavender honey. Add some fresh fruit on top for added sweetness.

If you like the combo of sweet and fresh, this Easy Lemon Tart recipe is for you! It’s made with the natural sweetness of honey so no sugar is needed.

Here’s what you’ll need:

  • Graham Crackers
  • Butter
  • Honey (I used Lavender Honey)
  • Heavy Cream
  • Lemon Zest
  • Lemon Juice
  • Vanilla Extract
  • Fresh Berries

Make the crust in your food processor. Combine the graham cracker sheets, 2 tablespoons of honey and melted butter until you get the desired crust consistency. Add this to your tart pan.

Meanwhile in a large pot, combine the heavy cream, remaining honey and lemon zest. Bring to a boil and allow to boil for 5 minutes before removing from the heat. Whisk in the lemon juice, vanilla and a pinch of salt. Let cool before pouring it into the crust. Cover and chill for 1 hour before serving.

This recipe works by itself but is elevated with a topping or two. I used fresh strawberries and raspberries. But you can also add these toppings:

Notes

  • If you don’t have lavender honey, you can use any honey for this recipe
  • While boiling the tart filling, do not walk away or use a small pot. This mixture can easily boil over so keep a close eye on it, whisking at all times.
  • The chill time can vary between tarts. It should only take an hour to set, but it may take longer. I actually put in the freezer to help with the setting process.
  • Store in the fridge or freezer. Keeping it in the freezer makes a delightful frozen treat. You will love it either way.

Ingredients

  • 8 Graham Cracker Sheets broken up into smaller pieces
  • 6 tablespoons Butter melted
  • 2 tablespoons + 1/3 cup Lavender Honey divided
  • 3 1/2 cups Heavy Cream
  • 2 tablespoons Lemon Zest
  • 1/3 cup Lemon Juice
  • 1 teaspoon Vanilla Extract
  • Fresh Berries for topping

Instructions

For the Crust

  1. Pre-heat oven to 350 degrees

  2. In a food processor, combine the graham crackers, melted butter and 2 tablespoons of honey until you have the consistency of a crust.

  3. Press the dough into the tart pan (with removable bottom) and bake in the oven for about 8 minutes or until toasted.

For the Filling

  1. In a large pot, combine the heavy cream, the remaining 1/3 cup honey, and lemon zest. Set on high heat and bring to a boil. Let boil for 5 minutes. Remove from the heat and whisk in the lemon juice, vanilla and a pinch of salt. Let cool for 10 minutes.

  2. Pour into the tart pan with the crust. Cover and chill for 1 hour or until set.

  3. Serve with fresh berries on top!
