There is something to be said for finding the good in everything. I feel that way about this photo! After a hard week, I see this photo and I see half of a heart which makes me smile. Feeling the much needed love with this Avocado Toast with Pears recipe today.
Not since trying Avocado Toast with Strawberries have I ever had Avocado Toast — I had no idea what I was missing! I am not searching out and trying new Avocado Toast recipes including this one.
I actually probably buried the lead with this recipe. Yes, it’s Avocado Toast with Pears, but there is so much more to this recipe including walnuts, honey, gorgonzola cheese and more.
It all starts with toasting some walnuts in cinnamon. This only takes about 45 seconds — make sure you don’t leave it unattended or you will burn the cinnamon.
Next, you will mash up one avocado. Add a pinch of salt and pepper to taste. Then spread it out onto the toast. One avocado will cover about 4 slices of toast.
I added a little more salt & pepper to each individual slice of toast depending on how much you like.
Slice up one pear. These need to be thin slices. Add about two slices of the pear to the avocado. The rest is like an assembly line.
Add the Gorgonzola cheese. If you don’t like the bite you get from Gorgonzola cheese, you can also use goat cheese crumbles. It will be just as good with goat cheese.
The walnuts with cinnamon.
Then drizzle some honey on top and you are ready to dive in.
This makes a great breakfast or afternoon treat. I’m amazed at how much the different flavors come out in this. The avocado is almost the foundation for the other flavors. I love the way it offers the base for this treat.
Avocado Toast with Pears
- 1 Avocado smashed
- 1 Pear thinly sliced
- 1/4 cup Walnuts
- 1/8 teaspoon Cinnamon
- 4 slices Bread toasted
- 2 tablespoons Honey
- 2 tablespoons Gorgonzola Cheese crumbled
- Salt & Pepper to taste
Add walnuts & cinnamon to a sauce pan and toast for about 45 seconds, remove from heat
Smash avocado and season with salt & pepper to taste
Toast bread and spread avocado on top
Layer the pear slices, gorgonzola cheese and walnuts
Drizzle honey on top
This recipe is adapted from a recipe I found on goop. You can also substitute the gorgonzola cheese for goat cheese.
