Lemon Poppy Seed Loaf

If I’m being honest, this loaf is amazing! But the Lemon Glaze on top is to die for! I could see putting this glaze on just about any bread or cupcake and you will be in heaven. The loaf is made with lemon juice and lemon zest so the lemon flavor is strong. The poppy seeds are just the right amount to separate this loaf from a plain lemon loaf.

Lemon Poppy Seed Loaf Ingredients

  • All-Purpose Flour
  • Baking Powder
  • Salt
  • Butter
  • Sugar
  • Eggs
  • Lemon Juice
  • Zest of two Lemons
  • Poppy Seeds
  • Milk

Ingredients for the Lemon Glaze

  • Powdered Sugar
  • Lemon Juice
  • Milk or Cream
  • Salt
  • Vanilla Extract

How to Make this Loaf

  • Grease a loaf pan with butter and pre-heat the oven to 350 degrees.
  • In a mixing bowl, sift the flour and add the baking powder and salt. Whisk together.
  • Add the sugar to the softened butter and mix with the hand mixer in a second mixing bowl.
  • Crack the eggs in the bowl and add to the sugar mixture. Beat the eggs into the mixture.
  • Add the zest over top and squeeze the lemon into the egg mixture.
  • Next, add the poppy seeds and mix until completely combined.
  • Pour 1/2 the milk and 1/2 the flour mixture and combine by hand.
  • Add the remaining milk and flour mixture and fold in together.
  • Pour into baking bread loaf pan and bake in the oven and cook for 45-50 minutes.

Ingredients

For the Lemon Poppy Seed Loaf

  • 1 3/4 cups All Purpose Flour sifted
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 3/4 cup Butter softened
  • 3/4 cup Sugar
  • 3 Eggs
  • 2 tablespoons Lemon Juice
  • Zest of 2 Lemons
  • 2 tablespoons Poppy Seeds
  • 3/4 cup Milk

For the Lemon Glaze

  • 1 cup Powdered Sugar
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Milk
  • 1 teaspoon Vanilla Extract
  • Pinch Salt

Instructions

For the Lemon Poppy Seed Loaf

  1. Preheat the oven to 350 degrees and grease the loaf pan with butter. Set aside.

  2. In a mixing bowl, sift the flour and add the baking powder and salt. Whisk together until combined.

  3. In a separate bowl, add the sugar to the softened butter and mix with the hand mixer. Add the eggs to the sugar mixture and beat with the mixer.

  4. Add the zest over top and squeeze the lemon into the egg mixture.Next, add the poppy seeds and mix until completely combined. Pour 1/2 the milk and 1/2 the flour mixture and combine by hand.Add the remaining milk and flour mixture and fold in together.Pou

  5. Pour into baking bread loaf pan and bake in the oven and cook for 45-50 minutes. Or until you get the desired texture you want.

  6. Remove from the oven and let cool for 10 minutes in the pan. Then remove from the pan and let completely cool before adding the glaze.

For the Lemon Glaze

  1. Combine all of the ingredents together in a mixing bowl. Whisk together. Once combined, add to the cooled Lemon Poppy Seed Loaf.

Recipe Notes

  • In making this recipe, I like a crunchier crust.  But you can remove the loaf before it starts to brown.
  • Let the loaf cool completely before adding the glaze.  If not, the glaze will melt and look runny.
  • When making the glaze, if it’s too thick after combining, you can add a tablespoon of milk a little at a time until you make the perfect glaze.
