Brussels Sprouts are high in fiber, vitamins, minerals, and antioxidants. Some say it has the potential to reduce the risk of cancer and decrease inflammation.

How to make Roasted Brussels Sprouts with Balsamic
This recipe starts with fresh brussels sprouts. The greener the better! It’s a lovely shade of green and it definitely checks off one of those important servings. Here’s what else you need:
- Olive Oil
- Salt & Pepper
- Balsamic Vinegar
- Honey
- Pecans
Start by taking off the outer layer of the brussels sprouts and trim them up. Cut lengthwise and put in a mixing bowl. Cover with half the olive oil and season with salt & pepper. Spread out on a covered baking sheet and put in the oven and roast for 20 minutes. Put the brussels sprouts back in the bowl and add the rest of the olive oil, balsamic vinegar, and honey and mix. Season with more salt if needed, then add the pecans and serve.
Notes
- Roasting the brussels sprouts give it a nice flavor but you can also saute them in a pan with a little olive oil.

Ingredients
- 1 1/2 pounds Brussels Sprouts peeled, trimmed, cut lengthwise
- 3 tablespoons Olive Oil divided
- 3/4 teaspoon Kosher Salt
- 1/2 teaspoon Fresh Ground Black Pepper
- 2 tablespoons Balsamic Vinegar
- 2 teaspoons Honey
- 3/4 cup Pecans
Instructions

Preheat oven to 425 degrees and line a baking sheet with parchment paper.

Remove the outer layer of the brussels sprouts and cut off the end. Then cut it in half lengthwise.

In a mixing bowl, add the brussels sprouts, 2 tablespoons olive oil, salt & pepper and toss until well coated.

Transfer the brussels sprouts to your baking sheet and bake for 20 minutes or until the sprouts are tender and starting to brown.

Put the sprouts back in your mixing bowl and add the remaining olive oil, balsamic vinegar and honey, and mix. Add to a serving bowl and add the pecans. Season with more salt if needed.
