Roasted Butternut Squash

When I think about fall, I think about pumpkins, cinnamon and apples. But this year we have added butternut squash to our fall menu. When my husband was growing up, he spent a lot of time making this Roasted Butternut Squash recipe with his mom and grandma.


This recipe has many variations too. Some people add cinnamon to the top for a little sweetness.

It’s perfect for dinner, a snack or a side dish for your Thanksgiving dinner. And did I mention how easy it is to make!

Roasted Butternut Squash

The first thing you will have to do is cut your butternut squash in half. This is actually harder than you would think. The rhine is really hard so you will need some muscles to cut this in half. This is a good time to pre-heat your oven to 350 degrees.

Next you will scoop out all of the guts of the squash. It’s very similar to a pumpkin — but not as slimy.

If you haven’t already done so, place your squash on a baking sheet. Put a tablespoon of butter inside the cup of the squash and on the neck — 2 tablespoons per side. Add salt and pepper to the top of the butter. I felt like I could have added way more pepper.

Next add a cup of water to the baking pan. Then cover the pan with aluminum foil and put in oven for at least 1 hour or until the squash is soft.

It will look like this when it comes out. You will then scoop out the squash from the skin. On a separate plate, flatten the squash and mix the butter into all of the squash. It will be the same consistency as mashed potatoes. Add a little more salt and pepper to taste.

The Roasted Butternut Squash has an amazing flavor especially with the melted butter. Butter makes everything better right? We added parsley too!

Prep Time 15 minutes
Cook Time 1 hour
Total Time 1 hour 30 minutes
Servings 1 Squash serves 2-4 people

Ingredients

  • 1 Butternut Squash
  • 4 tablespoons Butter
  • Salt & Pepper to taste
  • 1 cup Water

Instructions

  1. Pre-heat oven to 350 degrees
  2. Cut Squash in half longways
  3. Place Squash on baking sheet
  4. Scoop out the insides of the Squash
  5. Put a tablespoon of butter inside the cup of the Squash and on the neck of each side
  6. Add Salt & Pepper to the top of the Squash
  7. Add a cup of Water to the baking pan
  8. Cover the top of the Squash with aluminum foil
  9. Bake for 1 hour or until the Squash is completely soft
  10. Scoop out the Squash from the skin, flatten it and mix with all the melted Butter
  11. Add more Salt & Pepper to taste
  12. Serve

Recipe Notes

This is really easy to make as a side dish. You can also add a veggie and you have a meal. Sprinkle a little cinnamon on top to add some sweetness to the dish.
