Summer Mimosas 2 Ways

With blackberries, blueberries, strawberries, and raspberries in season, it's a great time to experiment with a new summer drink. Enjoy the summer months with my Summer Mimosas 2 Ways. These can be made with a little champagne or without for a refreshing drink.

Ingredients

For the Blackberry Blueberry Mimosa

  • 1 cup Blackberries
  • 1 cup Blueberries
  • 1/3 cup Orange Juice
  • Champagne
  • 7UP or Sprite optional
  • Blackberries or Blueberries for garnish

For the Strawberry Raspberry Mimosa

  • 1 cup Strawberries stem removed
  • 1 cup Raspberries
  • 1/3 cup Orange Juice
  • Champagne
  • 7UP or Sprite optional
  • Strawberries or Raspberries for garnish

Instructions

For the Blackberry Blueberry Mimosa

  1. Add the blackberries, blueberries and orange juice to Vitamix blender. Blend until smooth. Check notes if the seeds don't mix all the way.

  2. In a champagne flute or drinking glass, add the mixture to the bottom. It should fill about 1/4 or 1/2 of the glass, depending on how much flavor you want.

  3. Top it off with chilled Champagne. Mix together with mixing spoon and add extra fruit to the glass for garnish. Serve immediately.

For the Strawberry Raspberry Mimosa

  1. Add the strawberries, raspberries and orange juice to Vitamix blender. Blend until smooth.

  2. In a champagne flute or drinking glass, add the mixture to the bottom. Should fill about a 1/4 or 1/2 of the glass, depending on how strong you want it.

  3. Top it off with chilled Champagne. Mix together with mixing spoon and add extra fruit to the glass for garnish. Serve immediately.

Recipe Notes

  • If you don't have fresh berries, you can use frozen. Make sure it's thawed out before blending.
  • For the Blackberry Blueberry Mimosa, you will have to blend a little longer to get rid of the blackberry seeds. If you can't get them 100% blended, you will need to strain the fruit mixture before putting it into your glass.
  • Looking for a non-alcoholic version, replace the champagne with 7UP or Sprite. Or if you want a little more fizz, you can add both champagne and 7UP or Sprite.
  • You can make the fruit mixtures ahead of time and put in the fridge to keep cool. Pop the champagne right before you serve so the drink is nice and fresh.
  • I used these glasses for a bigger drink, but these mimosas can also be served in a traditional champagne flute.
