Oatmeal Raisin Cookies

Enjoy these fall inspired Oatmeal Raisin Cookies for any occasion. It’s especially perfect with an afternoon cup of tea!

Ingredients

  • 1 stick + 6 tablespoons Butter softened
  • 3/4 cup Brown Sugar firmly packed
  • 1/2 cup Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 3 cups Quick Oats (or Old Fashioned) uncooked
  • 1 cup Raisins

Instructions

  1. Preheat oven to 350°

  2. Using a hand mixer, beat butter, sugar and brown sugar until creamy

  3. Add eggs and vanilla and continue beating until incorporated

  4. In a separate bowl, combine flour, baking soda, cinnamon and salt

  5. Add the dry ingredients to the wet and mix by hand

  6. Next, add the uncooked oatmeal & raisins and combine

  7. Using a tablespoon or small ice cream scoop, add to a lined baking sheet

  8. Bake for 8-10 minutes or until golden brown.  Let cool and enjoy!
