Start by preheating your oven to 350 degrees. Line your loaf pan with parchment paper and grease with cooking spray.
Add the walnuts to a small cookie sheet and toast for a few minutes in the oven. Set aside to cool.
In a small bowl, remove the peel and mash the bananas with a fork. Set aside.
Then whisk together the flour, baking soda, and salt in a mixing bowl.
Melt the butter in a small saucepan. Next, in a large bowl, pour the melted butter over the sugar, egg and egg yolk, sour cream, and vanilla. Mix together until completely combined.Add the mashed bananas to the wet ingredients and mix by hand.
Gradually add the dry ingredients to the wet until combined.
Fold the walnuts into the batter and transfer them to the loaf pan. Save a few walnuts for the top.
Bake for about an hour or until your toothpick comes out clean. Let cool in the pan for 10 minutes, then remove and put on a cooling rack to cool the rest of the way.
