Skillet Berry Crumble

Spring is the time for berries and adding those berries to a crumble makes the perfect dessert.  This Skillet Berry Crumble is delish for any occasion.

Ingredients

For the Berry Mixture

  • 2 cups Fresh Raspberries
  • 2 cups Fresh Blackberries
  • 1 cup Sugar
  • 1/2 cup All-Purpose Flour
  • 1 tablespoon Cornstarch
  • 1/2 teaspoon Salt

For the Crumble

  • 1 cup All-Purpose Flour
  • 3/4 cup Old Fashioned Oats
  • 1/4 cup Sugar
  • 1/2 cup Light Brown Sugar
  • 1 teaspoon Cinnamon
  • 1 1/2 sticks Unsalted Butter cold

Instructions

  1. Preheat oven to 375° and season a 10-inch cast iron skillet with butter

  2. In a mixing bowl, toss together the berries, sugar, 1/2 cup flour, cornstarch, and salt.  Add mixture to the greased skillet

  3. In another bowl, whisk together the 1 cup flour, old-fashioned oats, sugar, light brown sugar, and cinnamon.  Cut the cold unsalted butter into the mixture, creating small pea-size pieces of butter.  Mix everything together with your hands.

  4. Spread topping evenly over the berry mixture

  5. Bake for 40-50 minutes or until the berries bubble underneath the topping.  The topping should also turn slightly brown.  If the topping is not cooking through, add some butter on top of the dry patches to help it along

  6. Serve warm with whipped cream or vanilla ice cream
