Corn & Goat Cheese Stuffed Peppers

Ingredients

  • 2 Green Peppers cut in half
  • 1 tablespoon Olive Oil
  • 1/2 medium Onion chopped
  • 3 ears Corn
  • 1/4 cup Goat Cheese crumbled
  • 2 tablespoons Vegetable Broth
  • 1/2 teaspoon Salt plus more for seasoning
  • Brown Rice
  • Lime for juice and zest
  • Cilantro

Instructions

  1. Preheat oven to broil
  2. Cut peppers in half and clean out the seeds
  3. Put under broiler for 2-3 minutes on each side
  4. Removed and reduce heat to 375 degrees
  5. Heat olive oil over medium heat
  6. Add onions and cook for 3-4 minutes
  7. Remove kernels from corn and add to pan and cook for another 4-5 minutes
  8. Add corn mixture, goat cheese, vegetable broth and 1/2 teaspoon of salt to food processor and pulse until the mixture is creamy
  9. Evenly spoon the mixture into the peppers and put back in the oven for 15-18 minutes
  10. Follow instructions for brown rice and add lime juice, zest and cilantro to rice
  11. Serve peppers with brown rice
