Tomato & Mozzarella Salad

When it comes to a light and fresh salad, this Tomato & Mozzarella Salad is perfect! This colorful salad can be paired with anything off the grill or just eat it by itself as a meal.

Ingredients

  • 7-8 Heirloom & Roma Tomatos quartered
  • 1 package Fresh Mozzarella Cheese sliced into bite-size pieces
  • Olive Oil for drizzling
  • 1 cup Fresh Basil chopped
  • 1 cup Fresh Parsley chopped
  • Salt & Pepper

Instructions

  1. Wash and cut up the tomatoes. First cut off the stem side then quarter the tomatoes. Place in mixing bowl.

  2. Slice the mozzarella cheese into bite size pieces and add to bowl.

  3. Drizzle enough olive oil to coat the tomatoes and cheese.

  4. Add salt & pepper to taste. Then mix everything together by hand.

  5. Add the parsley and basil and again mix by hand.

  6. Place on serving dish or bowl and enjoy!

Recipe Notes

  • The tomatoes can be cut even smaller if you prefer it. The key is to make sure the seeds of the tomato stay intact.
  • You can pre-make the salad before you serve and leave it at room temperature. This will allow all the flavors to come together even more.
  • Store the left-overs in an air-tight container in the refrigerator. It will last you a few days.
