Topped with balsamic infused strawberries and ricotta cheese, this delightful appetizer or dessert is one of my favorite crostini recipes yet!
Pre-heat oven to 350 degrees and slice the french baguette into medium to thin slices.
Using a brush, spread a little olive oil on both sides of the baguette slices. Put in the oven for 15-20 minutes or until the bread browns slightly on both sides. Flip the bread onto the other side midway through.
Let the bread cool completely and spread the ricotta on top.
Season with a little salt & pepper.
Add the sliced strawberries on top and drizzle with a little balsamic vinegar.
Top with mint and serve!
