White Mozzarella Pizza with Avocados!

Ingredients

For the White Sauce

  • 1/2 cup Whole Milk Ricotta cheese
  • 1/4 cup Half and Half
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic minced
  • Salt and freshly Ground Pepper

For the Pizza

  • 1 pre-made Pizza crust thin
  • 3 cups Baby Spinach slightly chopped
  • 6 ounces Fresh Mozzarella sliced
  • 1 Hass Avocado pitted and sliced
  • 1/4 cup grated Parmesan Cheese
  • Salt & freshly Ground Pepper

Instructions

To Make Sauce

  1. Blend ricotta cheese, half and half, olive oil and minced garlic together by hand. Add the salt and pepper to taste.

To Make Pizza

  1. Pre-heat oven to 350 degrees.
  2. Place the pizza crust on pizza stone in oven and heat up for about 8 minutes
  3. Spread the white sauce evenly all over the pizza crust
  4. Put in oven for 1-2 minutes until warmed up
  5. Add the spinach to the white sauce
  6. Top the spinach with the sliced Mozzarella then the sliced avocado
  7. Put back in oven for 2-4 minutes until the cheese is slightly melted
  8. Add salt/pepper to pizza
  9. Sprinkle with Parmesan Cheese
  10. Serve!

There are so many variations to this pizza. This makes a great appetizer or full meal. Pair with a nice glass of red wine.
