Fruit Galette with ice cream

Peach, Blueberry, & Blackberry Fruit Galette

There is something so perfect about a fruit galette! It’s warm, cozy, and delightfully sweet. This Peach, Blueberry & Blackberry Fruit Galette is all of those things and more.

Ingredients

  • 1 cup Fresh Peaches pitted and sliced
  • 1 cup Fresh Blueberries
  • 1 cup Fresh Blackberries
  • 1 Pie Crust pre-made
  • 1/2 package Cream Cheese
  • 3 tablespoons Sugar divided
  • 1 teaspoon Corn Starch
  • 1/2 teaspoon Vanilla Extract
  • Juice of 1/2 Lemon
  • 1 tablespoon Butter cold & sliced
  • Egg Wash 1 Egg + 1 Tablespoon Water

Instructions

  1. Preheat oven to 425 degrees and cover a baking sheet with parchment paper.

  2. Roll out the pie crust (if needed) and spread the cream cheese over the crust, leaving about 2 inches around the edges.

  3. Add the peaches, blueberries and blackberries fruit to the cream cheese.

  4. Top the fruite with sugar, corn starch, and vanilla extract. Mix together gently with your hands.

  5. Fold over the edges of the pie crust. Poke holes around the edges with a fork. Brush the egg wash on the crust. Sprinkle some sugar on top of the egg wash. Finally, add the sliced butter to the center of the galette.

  6. Bake for 15 minutes at 425 degrees. Then lower the temperature to 350 degrees for an additional 20 minutes.

  7. Remove and let cool just slightly before serving. You want it to be a little warm so the ice cream will melt over the top. Cut into slices and add a scoop of ice cream.

Recipe Notes

  • There are unlimited options for this Fruit Galette. Use different types of fruit or just one for a delicious dessert.
  • Make sure you let your pie crust come to room temperature before you spread the cream cheese on top. It will make it much easier to spread. The cream cheese will also need to be softened.
  • You can use frozen fruit, just make sure it's completely thawed out and dried on a paper towel.
  • If you don't have ice cream, no fear. You could also try a little whipped cream on top. Or enjoy it by itself too.
