This Tomato & Mozzarella Salad takes less that 15 minutes to make and is completely portable if taking to a picnic or summer bbq. And with only five ingredients, it’s likely you already have what you need to put it together.

Tomato & Mozzarella Salad Ingredients


This recipe starts with a full plate of tomatoes. I love the colorful heirloom tomatoes in season during the spring and summer months.

Here’s the full list of ingredients:

  • Heirloom or Roma Tomatoes
  • Mozzarella Cheese
  • Olive Oil
  • Basil
  • Parsley
  • Salt & Pepper

How to Make this Recipe

  • Cut off the stem on the tomatoes and cut in quarters.
  • Slice the fresh mozzarella cheese into bite size pieces.
  • Drizzle enough olive oil over the tomatoes and mozzarella cheese to cover.
  • Sprinkle with salt and pepper.
  • Get your hands dirty and combine everything by hand.
  • Add the parsley and basil and again mix by hand to cover the tomatoes completely.
  • Pour onto a serving dish and you are ready to enjoy.

Notes

  • The tomatoes can be cut even smaller if you prefer it. The key is to make sure the seeds of the tomato stay intact.
  • You can pre-make the salad before you serve and leave it at room temperature. This will allow all the flavors to come together even more.
  • Store the left-overs in an air-tight container in the refrigerator. It will last you a few days.

Ingredients

  • 7-8 Heirloom & Roma Tomatos quartered
  • 1 package Fresh Mozzarella Cheese sliced into bite-size pieces
  • Olive Oil for drizzling
  • 1 cup Fresh Basil chopped
  • 1 cup Fresh Parsley chopped
  • Salt & Pepper

Instructions

  1. Wash and cut up the tomatoes. First cut off the stem side then quarter the tomatoes. Place in mixing bowl.

  2. Slice the mozzarella cheese into bite size pieces and add to bowl.

  3. Drizzle enough olive oil to coat the tomatoes and cheese.

  4. Add salt & pepper to taste. Then mix everything together by hand.

  5. Add the parsley and basil and again mix by hand.

  6. Place on serving dish or bowl and enjoy!
